Big boy in the Bumbo
We finally got Joshua his green bumbo chair. We looked everywhere for a green one and eventually had to order it online. But it's here, and Joshua loves it.
I've been meaning to blog about Joshua's new skills. He's all the sudden SO coordinated! He can pick anything up and put it right in his mouth. He rolls over. And best of all....he sleeps through the night! He is such a happy boy all the time, and hardly ever cries. He's super ticklish and has the cutest little giggle. We love him SO much!

Alright That's It!
I was watching The Dr's today and they had Jillian (the trainer from The Biggest Loser) on as a guest host. One of the things she said you can do to help you lose weight is to make it public, so you feel accountable.

It's official. I'm off sugar.
I'm not eating any sweets until May 9th (Taleesa's wedding) and depending on how it goes, maybe even longer.

Yummy Deliciousness
I have this problem....I want to lose weight, but I also want to bake something new and sweet everyday and eat it all! Some days I win the battle some days I don't. Last night I lost.
I made these cupcakes and they are seriously some of the best ever! So I had to post the recipe for everyone to try. They are super easy and quick to make and SO GOOD! It's hard to feel bad about eating them when they taste so GOOD!
Irish Oatmeal Cupcakes with Broiled Brown Sugar Frosting
*And now I have to go make some Banana bread. I HAVE TO! I can't just throw the bad bananas away! I'll have to post that recipe too. I tried 2 or 3 until I found it. It is so moist and tasty.

Irish Oatmeal Cupcakes with Broiled Brown Sugar Frosting
1 cup old fashioned oats
1 and 1/2 cups boiling water
1/2 cup butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
1 and 1/3 cup flour (I used half whole wheat)
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
Brown Sugar Broiled Icing:
1 cup brown sugar
5 tablespoons butter
4 tablespoons cream or milk
pinch of salt and cinnamon
Combine oats and boiling water in a small bowl. Let rest for twenty minutes. Preheat oven to 350 degrees. Line a cupcake tin with paper liners. In a large bowl, cream butters and sugars. Add eggs and vanilla and beat well. Gently stir in flour, soda, cinnamon and salt. Stir in oatmeal mixture and combine gently. Pour a scant 1/4 cup into each of 24 muffin cups. Bake for about 20 minutes, or until top springs back and toothpick is clean. The tops will be flat and slightly bubbly looking. Let cool for about five minutes. Preheat broiler. In a small bowl, combine all of the icing ingredients. spread cupcakes with icing. Broil, WATCHING CLOSELY, until icing bubbles.*And now I have to go make some Banana bread. I HAVE TO! Some Cute New Pics
Here are a few new pictures I've taken this week. Joshua is starting to be so much fun. He interacts so much more everyday. He's starting to roll over, but he just gets in his side and stops. He loves it on is side though, I found him in bed just barely asleep on his side. Speaking of that...He has been asleep for 3 hours! What a good boy!

Longest Post Ever
So we're finally back in Idaho and I have mixed feelings. On one hand I'm excited to be back in my house with Beau and not living out of a suitcase anymore, and one the other hand I wish I was still down home just taking it easy and playing with family. I think Joshua wishes we were still there too. He liked having tons of people around all the time and I'm sure he didn't mind getting spoiled by his Grandma's either. He's totally bored with me already.
Our little vacation was SO much fun! We left here and met my family in Salt Lake to spend the weekend finding Taleesa a wedding dress and all of the sisters their bridesmaids dresses. We totally scored! In our first store of the day we found Taleesa's dress, and ours, all in one shot. Everything was perfect! Then we hit the mall and found all 6 bridesmaids shoes that were 70% off, AND a beautiful suit for my mom. It was a very successful (and way fun) trip to say the least.
Joshua and I spent the next week in Bunkerville just hanging out with family and spending loads of time outside in the 70+ degree weather! We took 1 or 2 walks a day just enjoying the sunshine. It was heavenly...haha!
That weekend we spent time with the Davis' in Toquerville. It's always a good time around their house. Kate keeps everyone laughing. Kathy, Jana and I went shopping and found Joshua the CUTEST clothes. Grandma Davis got Joshua a little Easter Sunday outfit that is to die for (thanks again Kathy). Then we headed back to B-ville so I could be there when Rachel and Richard blessed their new baby girl. It was so fun hanging out with Rachel.
We spent the next few days just taking it easy and then that Thursday Beau finally came! He flew into Vegas and I picked him up. It was SO nice to have him there. I felt bad though because the weather wasn't very nice. It was warm the whole time, until he got there. Poor guy, didn't get the relief from the cold like I did. The rest of the time we spent with Beau's family and Colby and Andrea. As always, we had lots of fun.
The day before we left, Shawn and Tara came up and we took them up Kolob to go snowmobiling. They had never been, and we hadn't had a chance yet this year so we thought we would take advantage. It wasn't the best snow ever, but it was still a good time.
The whole time we were there I was expecting Jana to go into labor at any moment, but she never did. She waited until the day we came home! She had another little girl (it was a surprise) and I'm SO sad we weren't there to meet her. It's a good thing we're coming down again soon, or I would be going nuts!
